Shortbread Pie Crust

The main difference is the process. Ingredients are very similar to the flaky pie crust recipe.
This crust will be less flaky, and more dense, since the flour and fat are emulsified (the fat surrounds the flour instead of the other way around). This is the technique we used in the bakery.
